Hi everyone,

It was back to work for me this week after the long summer break, and it brought home the importance of weekly planning and meal prep which can really help you to stay on track.

Knowing that meals are planned for the week ahead, and all the food is in the kitchen ready, certainly makes a working life easier.  I arrived home feeling really tired on a couple of evenings and was so thankful that I’d planned to use the slow cooker.  It was great to tuck into a lovely meal that was cooked and just needed serving.  I enjoyed one of my favourite slow cooker recipes yesterday evening – the spaghetti bolognese – a great way to end the working week!

When working, if I’m not using the slow cooker, I tend to do any food prep (eg: peeling and slicing vegetables and marinating meat) before I go to work so that when I arrive home to make the meal, it’s all ready to come out of the fridge and be cooked.  Because you know the ingredients are there, ready to cook, you are more likely to have that healthy meal you planned.

Most of the time, I will make double the portion needed so that some can be frozen for another evening or we may have the same meal two nights running.  It’s ideal for those evenings when you have a lot to do or when you just don’t feel like cooking.

This week, I also made sure there was a supply of my ‘lemon oaties’ to hand as I knew the staffroom would be full of treats during the first week back.  It was great to be able to enjoy a cup of tea and a biscuit – and all free on No Count!

It was great to see how popular the Lemon ‘Oaties’ were last week and I know some of you are trying different combinations already (thank you for the tips) – I’m looking forward to trying some Ginger ‘Oaties’ this weekend:-).

It’s really great that we can all help each other out on our weight loss/maintaining journeys – so thank you very much for getting in touch and letting me know how you’re getting on with the recipes.  It’s really great to see so many of you enjoying them.
