No Count Pancakes

These pancakes use the traditional pancake recipe but I’ve replaced flour with blitzed oats and added some vanilla extract to sweeten them a bit.  Using oats can make them a bit trickier to cook so I’d suggest using your daily oil allowance for this.

No Count: Free

If you are following WW Freestyle, you’d be better replacing the oats with plain flour and using Frylight.  The points would then be:

WW Freestyle: 4sp per serving

Ingredients (serves 4):

  • 100g oats
  • 3 eggs
  • 300ml skimmed milk
  • pinch of salt
  • a tsp vanilla extract

Method:

  1. Blitz the oats in a food processor.
  2. Whisk the eggs and milk together and pour into the oats; add the salt.
  3. Whisk all the mixture together.
  4. Heat oil/Frylight in a frying pan and pour in a quarter of the mixture.
  5. Turn once while cooking.  (I find it easier to cut the pancake into quarters before turning each one over separately – if using oats.)
  6. It’s best to stir the mixture before pouring out for another pancake.

Served here with fresh fruit, low fat natural yogurt and a drizzle of sugar-free syrup. (If following WW Freestyle, use fat-free natural yogurt for 0sp.)

  1. Just made these for my breakfast as am trying a no count day properly for the first time. They are amazing!I added a teaspoon of vanilla extract as I have a very sweet tooth and they are honestly better than any pancakes I ever made on pancake day. I will be having some for dessert later too.

  3. Hi Amanda, I blitz the oats for about 2 minutes in the food processor.They become quite small pieces, but don’t blitz well enough to make a flour.I hope this helps, Helen xxx

  4. Tried pancakes this morning loved them with jam and yogurt but am I suppose to make that amount for one person,. I cut the ingredients down but still too much had to leave some I was full.

  5. Hi Margaret, the mixture should make 4 or 5 pancakes which could serve between 2 and 4 people.You can make them and re-heat them the next day if there are too many.Glad you enjoyed them!Helen xxxxx

  9. Hi Susan, if you squirt lemon juice on them and sprinkle over a 0sp sweetener, they’ll be sweet.You could add sweetener to the mixture too if you wanted.Helen xxxx
