Hi everyone!  It’s now four weeks since the website was launched and it’s great to see how useful it’s been to so many people.  In addition to the UK, it’s had views from the USA, Africa, all over Europe, Japan and Australia so ‘Hi!’ if your reading this from far away!

Going back to work after the Easter holiday reminded me of the importance of weekly menu planning and shopping, whether going for goal or maintaining.  It makes it so much easier if you come home from a busy day at work, knowing exactly what you’re cooking and that all the ingredients are ready in the cupboards.  There were a couple of evenings when I arrived home, so pleased that I’d prepped the ingredients that morning otherwise goodness knows what I’d have eaten!  The slow cooker also came in very handy for those nights when I’m home a bit later – the Slow-cooked Bolognese and Chunky Beef Chilli were a delight after a busy day!

Last week’s new recipes seemed to go down well, and there was also a vegetarian addition – Quorn and Leek Couscous.  Many thanks to Donna (@babysmit) for getting involved and supplying some vegetarian recipes for the website which can be found alongside Marie’s (@marieburt) vegan ones.

Next week’s new recipes are:

  • No Count Roasted Veg and Home-made Meatballs with Spaghetti
  • No Count Vegetarian Shepherd’s Pie
  • Mum’s No Count Paella
  • Individual Banoffee Pies (1 point each)

You’re in for a treat with the banoffee pies.  I made four last weekend and had one a day for three days (my son, Ben, had the other)!  They are soooo good!
