Basil and Bean Dip
Today's dip recipe is courtesy of Mands (@mands5781 on Connect / mandst_ww_tortoise on Insta).
She love crudités and dips: they always go down well for parties or alongside a summer bbq, but the ready-made ones are always so high in points.
Mands recently made a platter of crudités for a buffet and decided to try something different which was a big success! So simple and tastes like a thick indulgent pesto!
Serves everyone who wants it for 0sp!
I've made it and love it too! It's also perfect in a salad - alongside my beetroot hummus - the recipe for this has been added to the website today too (in the Lunch section).
a 400g tin of cooked cannellini beans (or whatever white beans you have in the cupboard will do!!)
1x bunch of basil
1x handful of spinach
1tsp garlic paste
the zest and juice of 1 lemon
Salt and pepper to taste
Chuck everything into a food processor and blend till smooth! Add more seasoning to taste as required.
