An easy-to-make tea – free on No Count and 5 points if tracking!
Ingredients (serves 2):
- 2 chicken breasts, cut into chunks
- an onion, finely chopped
- 75g mushrooms, sliced
- 2 garlic cloves, crushed
- 100g brown rice
- 200ml hot chicken stock
- 2 tsp mixed herbs
- 25g Protein cheese, grated
- 50g frozen peas
Method:
- Cook the rice separately for 30 minutes.
- Spray a deep frying pan/wok with Frylight and cook the onion and chicken for five minutes, stirring regularly.
- Add the mushrooms and garlic, and cook for another 3 mins.
- Add the mixed herbs and pour in the stock, season well. Add the cooked rice and simmer for another 15 mins.
- Add the peas and stir through for another 2-3 mins until the peas are hot.
- Stir in the Protein cheese and serve.

Hy Helen, Iv not heard about ‘protein cheese’ is itfree and can I buy in a normal supermarket?
Morning Beverley,Protein cheese is not free on No Count but it’s very low in points (100g is 2 points).It tastes better when grated and put into food, but it’s a good substitute for the real thing.I buy mine from Tesco but I know it has been found in other supermarkets (not sure which though).Have a lovely Easter weekend.Helen xxx

Hi Ju Ju, protein cheese is a cheese that is high in protein and low in fat.It’s ideal in recipes like this because you can have so much more cheese for your points.It doesn’t taste as good as a lot of other cheeses if sliced for sandwiches but it’s great grated in recipes.Hope this helps!Helen xxx

Hi Helen I use my protein cheese it’s great isn’t it . However when I put it in the wwsite it comes up at 0 smart points ..admittedly I’ve only done 25g and 50g..so if that amount is 0 smart point ,then surely it is the same on a no count day ?

Hi Jan, thanks very much for bringing that to my attention.I’ve just double-checked using the app; it says up to 26g is 0 points, from 27g to 79g is 1 point and from 80g to 132g is 2 points.It should be the same whether on No Count or tracking (my App is set to No Count).Maybe the App’s playing up – I’ll check again tomorrow.Hope you have a fab rest of the week.Helen xxx
