Baked Lemon Cheesecake

This makes a gorgeous dessert – especially served with the blended strawberries and a selection of fresh fruit.  On No Count, the whole cheesecake is 9 points so I would count it as 1 point per portion if you divide it by 8.

If tracking, the whole cheesecake is 9 points so it would depend on the size of the slices as to how many points it would be.

Ingredients (serves 7 or 8):

  • 4 egg yolks
  • 4 egg whites
  • 100g Natvia Baking Pack
  • 150g Philadelphia lightest soft cheese
  • 200g quark
  • the juice and zest of 4 lemons
  • 2 tbsp plain flour

Method:

  1. Preheat the oven to 160C.
  2. Put the lemon juice, Natvia and egg yolks in a bowl and whisk for 4 – 5 minutes.
  3. Add the Philadelphia and quark and whisk until smooth.
  4. Stir in the lemon zest before sprinkling over the flour and stirring in.
  5. Whisk the egg whites in a separate bowl until the mixture forms stiff peaks and then fold into the cheesecake mixture.
  6. Pour the mixture into a round ovenproof dish. I used a silicone one with a pattern on the bottom – hence the design on the top of the cheesecake.
  7. Bake in the oven for about 40 minutes, but do check regularly – it should be golden brown on top when ready. (If overcooked it can be a bit dry.)
  8. Leave the cheesecake in the oven to cool down, with the oven door open.
  9. Turn out onto a plate and slice into portions – enjoy!

I’ve used Natvia Baking Pack in this recipe  As much as you like can be used for no points, but it is on the expensive side – you are probably best searching Google for the best deals of the day.

  1. Hi Tina, Natvia is the Australian version of Truvia – a stevia-based sweetener.It was introduced to me by someone on WW Connect.I, personally, wouldn’t use artificial sweeteners on a daily basis but I’m happy to use them in the odd dessert.Helen xxx

  2. Hi Margaret, some sweeteners, like Splenda, are 13 points for 100g which is why I’ve used Natvia – in order to keep the points low.You could use Truvia as that is also free in points but I’m not sure of any others that are.Helen xxx

  3. Hi Juliette, you can use Candarel, but it will increase the points value.Candarel is 12 points for 100g so it would increase each slice by about 1 or 2 points.Helen xxx

  7. Looks lovely. Tried your prawn curry last night – even hubby liked it! Thank you. Is natvia the same as truvia? It’s the same price per 100g.

  8. I think natvia and truvia are natural, as opposed to artificial, sweeteners, with no known negative effects, yet. I think it’s fine to use them regularly. They taste better than artificial ones too.
