Ingredients (serves 2):

2 garlic cloves (peel, slice, thin)

small bunch of fresh rosemary (strip from stalk & chop) if you haven’t fresh, use dried

olive oil (I use my WW oil spray, or use low cal oil spay such as Frylite)

pinch of dry chilli flakes

400g tin of cannellini beans

fresh parsley if you have it (I use frozen)

glug of red wine vinegar

juice of half a lemon
Method:

Fry, garlic, rosemary and chilli over a medium heat till garlic is golden, reserve some rosemary for garnish.

Add the beans in their water and simmer for about 5 minutes until thick.

Add a splash of vinegar and lemon juice, garnish with fried rosemary and parsley.This could also be used as a ‘side’ for meat or fish – enjoy!
