Marie’s No Count Garlic and Chilli Baked Beans

  

Ingredients (serves 2):

  • 2 garlic cloves (peel, slice, thin)
  •  small bunch of fresh rosemary (strip from stalk & chop) if you haven’t fresh, use dried
  •  olive oil (I use my WW oil spray, or use low cal oil spay such as Frylite)
  •  pinch of dry chilli flakes
  •  400g tin of cannellini beans
  •  fresh parsley if you have it (I use frozen)
  •  glug of red wine vinegar
  •  juice of half a lemon

Method:

  1. Fry, garlic, rosemary and chilli over a medium heat till garlic is golden, reserve some rosemary for garnish.
  2.  Add the beans in their water and simmer for about 5 minutes until thick.
  3.  Add a splash of vinegar and lemon juice, garnish with fried rosemary and parsley.
    This could also be used as a ‘side’ for meat or fish – enjoy!
